This error tells that you are hitting Operating Systems open files limit.
This setting is OS specific setting and can be increased. Our helm charts are updating this setting already (look here). If you already have this OS setting applied then you can switch to PERSISTENCE_LSM_ACCESS_STRATEGY=pread with this Weaviate setting this error should go away.
